Korean BBQ Tacos: A Flavorful Fusion Delight

Korean Beef Tacos Description A mind-blowing Korean Beef Tacos loaded with flavorful Korean beef as well as caramelized kimchi and Sriracha mayo, all packed into flour tortillas that are mini-sized.

Ingredients

For the Korean Beef:

  • 2 teaspoons of brown sugar
  • 2 Tablespoons sodium-reduced soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of crushed red pepper Flakes
  • Ground ginger 1/8 cup
  • 2 Tablespoons Vegetable Oil
  • 2 cloves garlic, minced
  • 8 grams ground beef

For the Kimchi:

  • 2 tablespoons oil of sesame
  • 1 cup chopped 1 cup chopped
  • 1 teaspoon sugar

For the Sriracha Mayonnaise:

  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha
  • 2 teaspoons fresh squeezed lime juice

For the Tacos:

  • 12 mini flour tortillas
  • Red onion diced to 1/4 Cup
  • Two tablespoons of fresh chopped cilantro leaves
  • A teaspoon of sesame seeds

Instructions

  1. Make Korean Beef: Prepare the Korean Beef: In small bowl, mix with brown sugar, the soy sauce red pepper flakes, sesame oil as well as ground ginger. In a large cast iron skillet prepare the vegetable oil on medium-high temperature. In the skillet, add minced garlic, and cook for approximately one minute, until fragrant. Then put in the ground meat and cook until the beef is brown, approximately three to five minutes. Make sure you crumble the beef while cooking. Remove any fat that is not needed before mixing into the soy sauce mix. Let it simmer for approximately 2 minutes, until it is heated and then put it aside.
  2. Make caramel from the Kimchi In the same skillet, cook the sesame oil at medium-high temperature. Add the chopped kimchi as well as sugar and cook stirring continuously until the sugar has caramelized and is heated through in about 3 to 5 minutes. Remove from the heat and place aside.
  3. Prepare the Sriracha mayonnaise in a bowl small, mix together mayonnaise with the Sriracha as well as lime juice. Set aside.
  4. Make the Tacos to serve the tacos, put a good portion of ground beef mixture in each tortilla. Serve with caramelized red onion, kimchi pieces as well as fresh chopped cilantro. Sprinkle with Sriracha mayonnaise, and sprinkle sesame seeds on top to enhance the texture and taste.

Notes

  • Freezer-Friendly Recipe perfect for meal preparation! It is possible to freeze remaining Korean Beef Tacos with fillings in bags of individual bags. Simply let them rest overnight before reheating on the stovetop using one tablespoon of water as necessary.
  • Serving Tips Tacos are best served with the freshest avocado or simple cucumber salad to make the flavors more balanced.
