- 1 cup creamy Parmesan garlic sauce
- 1/2 cup water or chicken stock
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Prepare the Potatoes: In your slow cooker, combine the potato chunks with olive oil, kosher salt, black pepper, and paprika. Stir to ensure the potatoes are well-coated.
- Add the Chicken: Place the chicken breasts on top of the seasoned potatoes. This layering allows the chicken juices to flavor the potatoes as they cook.
- Make the Sauce: In a bowl, mix the creamy Parmesan garlic sauce with water or chicken stock. Serve this mix over the chicken and potatoes that are in the slow cooker.
- Cook: Cover and cook on high for 4 hours or on low for 6 hours, until the chicken is cooked through and the potatoes are tender.
- Add Cheese: In the last 20 minutes of cooking, sprinkle the shredded mozzarella and optional Parmesan cheese over the top. Cover to allow the cheese to melt.
- Serve: Once finished cooking, garnish with fresh parsley if desired, and enjoy your Garlic Parmesan Chicken and Potatoes!

For the best flavor, ensure the potatoes are fully coated in olive oil and seasonings. You can also add vegetables like broccoli in the last 20 minutes for a more complete meal.
