Ingredients
  

  • 1 pound lean ground beef
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 1 14.5 oz can diced tomatoes
  • 1 15 oz can mixed vegetables
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 cup small pasta

Instructions
 

  • Brown ground beef in large pot over medium heat, breaking it up as it cooks (8-10 minutes)
  • Add onion, carrots, celery, and garlic. Sauté until vegetables begin to soften (5 minutes)
  • Pour in tomatoes, mixed vegetables, and broth
  • Add seasonings and bring to boil
  • Reduce heat and simmer for 20 minutes
  • If using pasta, add during last 8-10 minutes of cooking
  • Adjust seasoning to taste

Notes

  • For extra flavor, add a Parmesan rind while simmering
  • Can be made ahead and reheated
  • Freezes well without pasta
  • Excellent for meal prep
