- 1 pound lean ground beef
- 1 onion diced
- 2 carrots sliced
- 2 celery stalks chopped
- 2 cloves garlic minced
- 1 14.5 oz can diced tomatoes
- 1 15 oz can mixed vegetables
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: 1 cup small pasta
Brown ground beef in large pot over medium heat, breaking it up as it cooks (8-10 minutes)
Add onion, carrots, celery, and garlic. Sauté until vegetables begin to soften (5 minutes)
Pour in tomatoes, mixed vegetables, and broth
Add seasonings and bring to boil
Reduce heat and simmer for 20 minutes
If using pasta, add during last 8-10 minutes of cooking
Adjust seasoning to taste
- For extra flavor, add a Parmesan rind while simmering
- Can be made ahead and reheated
