  • 8 Eggo waffles classic, blueberry or chocolate chip

Ice Cream Filling

  • 1 pint ice cream vanilla, chocolate, strawberry or mix

Instructions
 

  • Toast the Eggo waffles until golden brown. Let them cool slightly.
  • While cooling, slightly soften the ice cream for easier scooping.
  • Place a scoop of ice cream on one waffle and top with another waffle to form a sandwich.
  • Optionally, roll the edges in toppings like sprinkles or cookie crumbs.
  • Wrap each sandwich in plastic or parchment paper and freeze for at least 1 hour.
