Ingredients
  

For the Meatloaf

  • 1.5 pounds ground beef preferably 80/20 blend
  • 1 cup provolone cheese or Cheez Whiz, Monterey Jack, etc., chopped
  • 1 green bell pepper finely diced
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 cup breadcrumbs or oats
  • 2 large eggs
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Italian seasoning
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Sauté onion and green pepper in olive oil for 5 minutes. Add garlic and cook for another minute. Let cool.
  • In a bowl, combine ground beef, sautéed vegetables, breadcrumbs, eggs, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently.
  • Fold in chopped cheese.
  • Shape into a loaf in a pan. Add extra cheese on top if desired.
  • Bake for 60 minutes or until internal temperature reaches 160°F (71°C).
  • Rest for 10 minutes before slicing and serving.

Notes

Feel free to customize with different meats like turkey or chicken, or add mushrooms or spinach for extra nutrition. Adjust spices to your liking.
