Ingredients
  

Main Ingredients

  • 2 pounds boneless skinless chicken thighs cut into bite-sized pieces
  • 1 can pineapple chunks juice reserved
  • 1/2 cup pineapple juice from canned pineapple
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated

Optional Additions

  • 1 bell pepper sliced
  • 1 onion sliced

Instructions
 

  • Trim and cut chicken into bite-sized pieces. Slice vegetables and drain the pineapple chunks, reserving the juice.
  • Place chicken in the bottom of the slow cooker. Add bell pepper, onion, and pineapple chunks on top.
  • In a bowl, whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger until sugar dissolves. Pour over the chicken and vegetables.
  • Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and cooked through (165°F).
  • For thicker sauce, mix 1 tbsp cornstarch with water and stir into the slow cooker in the last 30 minutes.

Notes

Serve over jasmine rice, coconut rice, or a salad. Garnish with green onions or sesame seeds for added flavor and presentation.
