from canned pineapple

soy sauce

Instructions
Trim and cut chicken into bite-sized pieces. Slice vegetables and drain the pineapple chunks, reserving the juice.
Place chicken in the bottom of the slow cooker. Add bell pepper, onion, and pineapple chunks on top.
In a bowl, whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger until sugar dissolves. Pour over the chicken and vegetables.
Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and cooked through (165°F).
For thicker sauce, mix 1 tbsp cornstarch with water and stir into the slow cooker in the last 30 minutes.
Notes
Serve over jasmine rice, coconut rice, or a salad. Garnish with green onions or sesame seeds for added flavor and presentation.
