Ingredients
  

  • 2 lbs American wagyu beef chuck or brisket cut
  • 4 brioche buns
  • Kosher salt
  • Freshly ground black pepper
  • Optional toppings as desired

Instructions
 

  • If grinding fresh, chill all equipment and meat for 30 minutes
  • Grind meat using coarse plate if not pre-ground
  • Divide into 8 oz portions
  • Gently form into patties with slight center dimple
  • Season generously with salt and pepper
  • Heat cooking surface to 400-450°F
  • Cook 3-4 minutes per side for medium-rare
  • Rest 3-5 minutes before serving
  • Serve on toasted brioche buns with desired toppings

Notes

  • Don't overwork the meat
  • Season just before cooking
  • Allow meat to come to room temperature for 30 minutes before cooking
  • Use a meat thermometer for precise doneness
