- 2 lbs American wagyu beef chuck or brisket cut
- 4 brioche buns
- Kosher salt
- Freshly ground black pepper
- Optional toppings as desired
If grinding fresh, chill all equipment and meat for 30 minutes
Grind meat using coarse plate if not pre-ground
Divide into 8 oz portions
Gently form into patties with slight center dimple
Season generously with salt and pepper
Heat cooking surface to 400-450°F
Cook 3-4 minutes per side for medium-rare
Rest 3-5 minutes before serving
