Ingredients
  

Cookie Dough

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt

Add-ins

  • 1.5 cups mini marshmallows or chopped regular marshmallows
  • 1 cup chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Cream together softened butter, brown sugar, and granulated sugar until fluffy.
  • Add eggs and vanilla extract. Mix until combined.
  • Stir in flour, baking soda, and salt until a dough forms.
  • Fold in marshmallows and chocolate chips.
  • Scoop dough and optionally stuff a marshmallow in the center of each ball.
  • Place dough balls on baking sheet and bake 10–12 minutes until golden brown.
  • Let cool on tray before serving.

Notes

Freeze marshmallows before baking to prevent excessive melting. Let cookies cool before moving to avoid sticky messes.
